Ingredients

  • 5oz butter, cubed
  • 6oz light soft brown sugar
  • 17oz mixed dried fruit
  • 7fl. oz milk
  • 7oz plain flour
  • 1 tsp mixed spice
  • 1 tsp bicarbonate of soda
  • Pinch of salt
  • 2 medium eggs, beaten
  • 17fl. oz water

Instructions

Step 1
Add butter, sugar, dried fruit, milk to pot. Flip the SmartSwitch to AIR FRY. Select SEAR/SAUTÉ, set to 4 and press START/STOP to start cooking.  Stir every few minutes until the butter is melted and the mixture starts to boil.  This may take 5 minutes. Remove fruit from pot into a bowl and allow to cool. Wash out pot

Step 2
Meanwhile, grease multi-purpose cake tin and line bottom and sides with a circle of baking parchment

Step 3
Add 500ml water to pot. Push in the legs on the Cook && Crisp tray, then place the tray in the bottom position in the pot

Step 4
In a large bowl, sift together flour, mixed spice, bicarbonate of soda and a pinch of salt. Add beaten eggs and then pour the melted cooled ingredients into the dry. Gently stir together. Pour into prepared tin. Place on tray

Step 5
Close the lid and flip the SmartSwitch to RAPID COOKER. Select STEAM BAKE, set temperature to 150°C and set time to 30 minutes. Press START/STOP to begin cooking (the unit will steam for approx. 20 minutes before countdown timer begins). Ten minutes before the end of cooking, carefully cover cake with foil, tucking around the sides of tin

Step 6
The cake should be cooked when a cocktail stick is inserted in the centre comes out clean. Allow to cool in tin for 30 minutes, before turning out onto a wire rack
