Breakfast Waffles with Poached Egg
A delicious breakfast waffle treat which is sure to set you up for the day ahead. I've chosen to serve with poached egg and beans, but these waffles are so versatile you can top with your favourite foods for a different twist every day!

Ingredients
For the waffles
- 1/3 cup olive oil
- 1 ½ cup flour
- 1 tbsp potato starch
- ½ cup Greek yoghurt
- 7oz milk
- 1 tsp salt
- 2 eggs
- 1 tsp baking powder
- ½ tsp bicarbonate soda
To serve
- 1 can baked beans
- 4 poached eggs
- Waffle Iron
Instructions
Step 1
Place the flour and all other waffle ingredients in your blender and blitz until well combined
Step 2
Cover and leave to rest for 10-15 min
Step 3
Cook in batches in a pre-heated waffle iron until golden and crisp (4-5 minutes; you'll need to spread the batter in the iron and it will puff up a lot as it cooks)
Step 4
Serve with hot beans and poached egg
