Chicken & Avocado Panini

- 1 panini or baguette roll, cut in half lengthwise
- 1-2 tablespoons mayonnaise
- 50-75g sliced cooked chicken
- ½ avocado, thinly sliced
- Handful of rocket leaves
- Kosher salt and ground black pepper, as desired
- 1 tablespoon olive oil
Instructions
Step 1
Flip unit down to the horizontal position and push the lever back all the way until it clicks into position.
Step 2
Spread mayonnaise over one half of the roll. Top with chicken, avocado and rocket leaves. Season as desired with salt and pepper. Then close the sandwich with the remaining roll half.
Step 3
Place the sandwich as far forward on the grill tray away from handle. Drizzle or brush the top with olive oil. Using the top handle, press down so the top cooking plate lowers.
Step 4
Insert press into unit. Select PANINI, select HIGH and set the timer to 10 minutes. Select START/STOP to begin. Bake until your desired shade is reached.
Step 5
When cooking is complete, remove panini press from unit and serve immediately.
