Creamy Rice Pudding

- 0.7oz butter
- 7oz short grain rice or pudding rice
- 26fl. oz whole milk, divided
- 1oz caster sugar
- Pinch of nutmeg
- 5fl. oz double cream
- Jam, to serve
Instructions
Step 1
Move slider to AIR FRY/HOB position. Select SEAR/SAUTÈ and set to 4. Select START/STOP to begin. Add butter to pot and allow to melt.
Step 2
Stir in rice and allow the grains to be coated in butter. Then add 700ml milk into pot. Turn off. Close lid. Move slider to the left.
Step 3
Select PRESSURE and set to HIGH. Set time to 3 minutes. Select PRESSURE RELEASE and then select NATURAL, making sure the pressure release valve is in the SEAL position. Press START/STOP to begin cooking (the unit will build pressure for about approximately 7 minutes before cooking begins).
Step 4
When cooking is complete and the steam is released, move slider to the AIR FRY/HOB position, then carefully open the lid.
Step 5
Select SEAR/SAUTÉ and set to 3. Stir in sugar, nutmeg, cream and remaining 50ml milk, ensure all the sugar is dissolved, before serving warm with a dollop of jam or serve cold.
