Creamy Spinach Risotto
A deliciously creamy vegetarian risotto which is very quick and easy to make - just let your Ninja Foodi Multi-Cooker do all the hard work!
Ingredients
- 1 onion
- 1 clove garlic
- 0.88oz unsalted butter
- 14oz arborio rice
- 28fl. oz vegetable stock (chicken stock as a non-vegetarian option)
- 3.5oz spinach, finely chopped
- 0.88oz vegetarian hard cheese (or parmesan as a non-vegetarian option)
- To taste pepper
- To garnish parsley
Instructions
Step 1
Chop the onion and the garlic
Step 2
Switch your Ninja Foodi Multi-Cooker to sauté. Heat the butter and the onion until the onion is translucent. Then add the garlic and cook for another minute
Step 3
Add the arborio rice and cook for about 2-3 minutes
Step 4
Pour in the vegetable stock little by little - stir well after each pour
Step 5
Pop on the pressure lid and pressure cook for 7 minutes
Step 6
Once done, carefully quick release the pressure and remove the pressure cooking lid. Mix the rice well and add some pepper to taste
Step 7
Add the finely chopped spinach and the parmesan and mix well
Step 8
The risotto is ready to serve - garnish with some parsley and cheese
