Crispy Topped Salmon with New Potatoes & Broccoli

Ingredients
- 1 lime, zest and juice
- 1 tbsp sesame seed oil
- 1 tbsp soy sauce
- 0.8 inches cube of ginger, grated
- A pinch chilli flakes
- 1 tsp caster sugar
- 4 salmon fillets (130g each)
- Salt and ground black pepper to taste
- 0.7oz dried breadcrumbs
- 17.5oz baby new potatoes, cut into half or quarters if large
- 10.5oz large broccoli florets
- 4 spring onions, each cut in two
- 6.13fl. oz water
- 1/2 tsp salt
Instructions
Step 1
In a shallow dish, place lime zest and juice, sesame seed oil, soy sauce, ginger, chilli and sugar. Stir well to combine. Add the salmon, season and turn to fully coat. Leave to marinate for 10 minutes. Remove salmon (reserve marinade) and sprinkle breadcrumbs over each fillet. Press breadcrumbs firmly into fish to coat.
Step 2
Put potatoes, broccoli, spring onions, water and salt in the bottom of the pot. Stir together.
Step 3
Close the lid and move slider to the middle position. Select STEAM AIRFRY, set temperature to 170°C and time to 8 minutes. Press START/STOP to begin cooking (this will STEAM for approximately 9 minutes before switching to STEAM AIR FRY). When cooking is complete, carefully remove the rack with the salmon.
Step 4
Drain the vegetables, then serve with salmon hot, along with the sauce.
