Ingredients

  • 10oz cod fillet
  • 1 cup panko breadcrumbs
  • 1 tsp salt
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp ground pepper
  • 0.25 cup mayonnaise
  • 14oz Maris piper potatoes
  • 2 tbsp olive oil
  • Garden peas
  • Tartar sauce

Instructions

Step 1
Cut the potatoes in 1/2 inch thick chips and soak in water for at least 30 mins, this will draw out the starch from the potatoes and help with the crispier texture and better colour.

Step 2
Mix the breadcrumbs into a bowl with the salt, garlic, paprika and pepper.

Step 3
Cut the cod into equal size fish fingers and brush generously with mayonnaise on all sides, then coat each fish fingers in breadcrumbs. Place in the fridge until ready to use.

Step 4
Drain the chips and pat dry with kitchen towel, season with the olive oil, salt and pepper.

Step 5
Preheat the grill to 200ºC using the air fry function. Arrange the chips in the air fry basket and cook for 18-20 mins mixing them half way. Once the chips are ready take them out and keep warm, add the fish fingers to the basket and cook for 8 mins at 200ºC. Alternatively you can place the fish fingers on top of the chips with 10 mins of cooking time to go and finish cooking them at the same time.

Step 6
Serve with buttered garden peas and tartar sauce.
