Ingredients

LEVEL 1 (Combi Pan)

  • 2lbs Maris Piper potatoes, peeled, cut into 2cm cubes
  • 8fl. oz whole milk
  • 1/2 tsp nutmeg
  • 3oz cheddar, grated
  • 1oz butter, cubed
  • 2 tbsp honey
  • 2 tbsp double cream
  • 1 tbsp wholegrain mustard
  • Salt, as desired

LEVEL 2 (Bake Tray)

  • 4fl. oz mayonnaise
  • 1oz melted butter
  • 4 tbsp honey
  • 2 tbsp Dijon mustard
  • 2 tbsp wholegrain mustard
  • 1 tbsp sea salt flakes
  • 1 tsp English mustard
  • 1/4 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1/4 tsp ground black pepper
  • 2 sprigs thyme, leaves only
  • 6 x 8.82oz pork chops

Instructions

Step 1
In a large bowl, add all the ingredients for the pork chops and whisk together. Add pork chops and toss, coating evenly in sauce. Cover and refrigerate for at least 4 hours.

Step 2
Add the potatoes, milk, and nutmeg into the Combi Pan and stir to combine. Slide the pan into Level 1.  

Step 3
Transfer pork chops and marinade to the Bake Tray and spread evenly. Slide the tray into Level 2. 

Step 4
Close door and flip the SmartSwitch to COMBI COOKER. Select COMBI MEALS, set temperature to 190°C and set time to 15 minutes. Press START/STOP to begin cooking (the unit will steam for 9 minutes before cooking).  

Step 5
After 12 minutes check the pork is cooked. If ready remove tray, if not reinsert and cook until the end of cook time. Close door to continue cooking.

Step 6
Once cooking is complete, remove tray and pan. Pour meat juices into the Combi Pan then leave pork to rest.

Step 7
Using a silicone potato masher mash the potatoes until smooth then stir in the remaining ingredients. Insert pan back into Level 1.  

Step 8
With the door open, flip the SmartSwitch to AIR FRY/HOB. Select SEAR/SAUTÉ and set temperature to HI. Press START/STOP. Cook for 5 minutes, stirring occasionally then serve immediately with pork chops.
