No-Bake Apple and Cinnamon Breakfast Bars
Looking for an easy grab and go breakfast? Then look no further than these No-Bake Apple and Cinnamon Breakfast Bars. Packed with dried fruits, nuts, oats, coconut oil and cinnamon they'll keep you fuller and energised for longer.
Ingredients
- 7oz dried apple rings
- 2oz dried banana
- 1oz goji berries
- 5oz mixed nuts
- 3oz gluten-free oats
- 4 tbsp coconut oil
- 1 tbsp ground cinnamon
- Generous pinch sea salt
Instructions
Step 1
Line a 20cm square cake/brownie tin and set to one side.
Step 2
Place all the ingredients into the food processor bowl with the blade installed. Secure the lid and select HIGH. Scrape the sides down with a silicone spatula and repeat the process until the mixture sticks together when pressed between the fingers.
Step 3
Transfer the mixture to the lined tin and press down with the hands until evenly distributed. Place the tin into the freezer for 20 minutes until firm.
Step 4
Remove from the freezer and slice into 8 large bars or 16 squares. Store in an airtight container within the refrigerator for up to one week.
