Parmesan Truffle Chicken Tenders
Quick, easy and healthy alternative to crispy fried chicken with delicious parmesan truffle coating

- 400g sichicken tenders - mediumze
- 3oz of cornflakes
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp onion powder
- 2 eggs, beaten
- 5oz flour
- 1oz butter
- Cooking spray
- 1-2 tsp truffle oil
- 3oz parmesan, grated
- To taste fresh parsley, chopped
- To taste salt and pepper
Instructions
Step 1
Add the cornflakes, garlic powder, paprika and onion powder to a ziplock bag, season with salt and pepper and crush them. Alternatively use a blender to crush all the ingredients
Step 2
Prepare three bowls - one with flour, one with eggs and one with the crushed cornflakes
Step 3
Dust all the tenders in the flour, then dip them into the egg and roll in the cornflakes.
Step 4
Preheat the Ninja grill to 200ºC air fry. Place the tenders in the basket and spray with cooking oil. Cook for 6 minutes, then turn over, spray again and cook for further 6 min.
Step 5
While the tenders are cooking melt the butter in the microwave and combine with the truffle oil, half of the parsley and half of the parmesan in a large bowl. Then once cooked mix in the cooked tenders and coat well
Step 6
Plate the chicken and garnish with more grated parmesan and parsley. Serve with ranch dip and buffalo hot sauce
