Raspberry & Rosewater Sorbet

- 8.75oz frozen raspberries
- 3.5oz caster sugar
- 3.5fl. oz boiling water
- 1 1/2 teaspoons rosewater
- 1 tablespoon warm water, plus 2 teaspoons extra
- ½ teaspoon egg white powder
Instructions
Step 1
Place raspberries and sugar into bowl, pour in boiling water and stir to dissolve sugar. Add rosewater.
Step 2
Mix 1 tablespoon warm water and egg white powder to a smooth paste in a small jug. Add 2 teaspoons warm water, beat well. Once mixture comes back together, add to raspberry mixture and mix to combine.
Step 3
Transfer mixture to empty tub and place into ice bath. Once cooled, place lid on tub and freeze for 24 hours.
Step 4
Remove tub from freezer and remove lid from tub. Place tub in outer bowl, install paddle onto outer bowl lid, and lock the lid assembly on the outer bowl. Place bowl assembly on motor base and twist the handle right to raise the platform and lock in place.
Step 5
Select SORBET.
Step 6
Once processing is complete, add mix-ins or remove sorbet from tub and serve immediately.
