Slow-Cooked Bolognese Sauce

- 2 tbsp olive oil
- 1 white onion, peeled, diced
- 2 celery stalks, diced
- 2 whole carrots, peeled, diced
- 3 garlic cloves, peeled, minced
- 2 tbsp tomato paste
- 2lbs minced beef
- 1 tbsp Italian seasoning
- Sea salt and ground black pepper, as desired
- 8fl. oz dry red wine
- 2 x 14.1oz tins of chopped tomatoes
- 6fl. oz whole milk
Instructions
Step 1
Slide the Combi Pan into Level 1. With the door open, flip the SmartSwitch to AIR FRY/Cooker. Select SEAR/SAUTÉ, and set temperature to HI. Press START/STOP and let pan preheat in unit for 2 minutes.
Step 2
After 2 minutes, using an oven mitt, carefully remove the pan and add olive oil to cover the bottom of the pan evenly. Add onion, celery, carrots, and garlic. Return pan to unit and, with the door open, sauté vegetables for 6 minutes, stirring occasionally.
Step 3
After 6 minutes, remove pan and add tomato paste. Stir until evenly combined, return pan to unit and cook for 1 minute. Remove pan, add minced beef, Italian seasoning, salt, and pepper. Stir to combine. Return pan to Level 1 and cook until beef is browned, about 5 minutes.
Step 4
After 5 minutes, remove pan, and add red wine. Return pan to unit and let mixture reduce for 3 minutes.
Step 5
Press START/STOP to turn off unit. Transfer the pan to a flat heat-safe surface, add tomatoes and liquid. With the back of a wooden spoon, break up the tomatoes, then whisk in milk, salt, and pepper until combined.
Step 6
Return pan to Level 1 and close door. Select SLOW COOK, set temperature to HI and set time to 4 hours. Press START/STOP to begin cooking.
Step 7
When cooking is complete, remove pan and serve bolognese over pasta.
