Sticky Pork Ribs in Cider
TIP: If ribs are in one rack, cut into strips. Cooking liquor can be made into a sauce if desired.

Ingredients
For the ribs
- 3lbs pork ribs
- 1 medium onion, diced
- 2 garlic cloves
- 5 peppercorns
- Sprig of fresh thyme
- 8fl. oz cider
- 3fl. oz water
- Salt and freshly ground black pepper, as desired
For the marinade
- 2 tbsp oil
- 2 tbsp dark brown sugar
- 2 tbsp tomato ketchup
- 2 tbsp dark soy sauce
- 1 tsp fennel seeds, crushed
- 1 tsp smoked paprika
- ½ tsp chilli flakes
Instructions
Step 1
Place basket in cooking pot, place ribs and onion in basket and remaining ingredients in pot. Season ribs to taste.
Step 2
Close the lid and move slider to left position. Select PRESSURE and set to HIGH. Set time to 22 minutes. Make sure the pressure release valve is in the SEAL position. Use the arrows to the left of the display to select PRESSURE RELEASE and select QUICK RELEASE. Then press START/STOP to begin cooking (the unit will build pressure for approximately 14 minutes before cooking begins).
Step 3
Meanwhile prepare marinade by placing all ingredients into a small bowl and mix together.
Step 4
Carefully open lid when unit has finished releasing pressure. Remove basket and discard the liquid. Wipe out pot. Brush ribs with marinade, making sure they are all thoroughly coated. Return basket with ribs to pot. Reserve remaining marinade.
Step 5
Move slider to right position. Select AIR FRY. Select temperature Select AIR FRY and set temperature to 200°C time to 12 minutes. Select START/STOP to begin. After 6 minutes, re-arrange ribs and brush with any remaining marinade.
Step 6
Serve hot with slaw or a red onion and tomato salad.
