Barely Soup
Autumnal nourishing, warming Barley Soup with yoghurt. This is a hearty soup that is nutritious and delicious.
Ingredients
- 1 tbsp Oil
- 1 Onion, diced
- 1 Garlic Cloves, crushed
- 5.25oz Pearl Barley
- 1 tsp Thyme
- Salt and Pepper
- 1l Vegetable Stock
- 17.5fl. oz Water
- 3 tbsp Greek Yoghurt
- 2 tbsp Parsley, chopped
Instructions
Step 1
Heat oil in Ninja Foodi on saute mode.
Step 2
Add Onion. Cook until golden brown - 7 - 10 minutes. Stirring occasionally. You may need to add a couple of tablespoons of water to avoid it catching.
Step 3
Add Garlic. Cook for 1 minute.
Step 4
Add Barley. Mix through.
Step 5
Add Thyme. Season with Salt and Pepper.
Step 6
Pour in Vegetable Stock and water.
Step 7
Put the lid on, seal the vent and cook the soup on manual high pressure for 20 min. Do a quick release.
Step 8
Stir in the yoghurt and select saute. Cook for 1 minute.
Step 9
Add chopped parsley. Serve warm.
