Chicken Roulade with Grilled Vegetables

Ingredients
- 4 Chicken breasts
- 4 slices Ham
- 0.7oz Grated parmesan
- 1 tbsp Fresh parsley - finely chopped
- 1 tbsp Fresh basil - finely chopped
- 1 Courgette - halved and quartered
- 1 Red bell pepper - sliced into 1.5cm slices
- 1 Yellow pepper - sliced into 1.5cm slices
- 1 tsp Oregano
- 1 tbsp Olive oil
- 1 Garlic clove - minced
- To taste Salt and pepper
Instructions
Step 1
Start by cleaning chicken breast and then butterflying them open. Lightly pound out. Season with salt and pepper from both sides. Sprinkle one side with parmesan, and then place 1 slice of ham on each chicken breast. Sprinkle with freshly chopped herbs and roll up. Secure ends with toothpicks
Step 2
Insert grill plate in unit and close lid. Select GRILL, set temperature to MED and time to 25 minutes. Press START/STOP to begin preheating
Step 3
Meanwhile in a large bowl, add courgette, bell peppers, oregano, garlic, salt, pepper and olive oil. Toss to get all vegetable pieces well-seasoned
Step 4
Once unit beeps to signify it has preheated, carefully place the chicken rolls on the grill plate and close the lid to begin cooking
Step 5
When there is 10 minutes left on the timer, open the lid and add veggies. Close lid to continue
Step 6
When cooking is complete, remove chicken rolls and allow to rest for 2 minutes. Serve hot
