Ingredients

  • 4 Chicken breasts
  • 4 slices Ham
  • 0.7oz Grated parmesan
  • 1 tbsp Fresh parsley - finely chopped
  • 1 tbsp Fresh basil - finely chopped
  • 1 Courgette - halved and quartered
  • 1 Red bell pepper - sliced into 1.5cm slices
  • 1 Yellow pepper - sliced into 1.5cm slices
  • 1 tsp Oregano
  • 1 tbsp Olive oil
  • 1 Garlic clove - minced
  • To taste Salt and pepper

Instructions

Step 1
Start by cleaning chicken breast and then butterflying them open. Lightly pound out. Season with salt and pepper from both sides. Sprinkle one side with parmesan, and then place 1 slice of ham on each chicken breast. Sprinkle with freshly chopped herbs and roll up. Secure ends with toothpicks

Step 2
Insert grill plate in unit and close lid. Select GRILL, set temperature to MED and time to 25 minutes. Press START/STOP to begin preheating

Step 3
Meanwhile in a large bowl, add courgette, bell peppers, oregano, garlic, salt, pepper and olive oil. Toss to get all vegetable pieces well-seasoned

Step 4
Once unit beeps to signify it has preheated, carefully place the chicken rolls on the grill plate and close the lid to begin cooking

Step 5
When there is 10 minutes left on the timer, open the lid and add veggies. Close lid to continue

Step 6
When cooking is complete, remove chicken rolls and allow to rest for 2 minutes. Serve hot
