Chocolate Cardamom Cookies
These Cardamom and Chocolate Cookies are chewy, aromatic, gently warming and delicious.

Ingredients
- 4oz butter
- 4oz dark muscovado sugar
- 1oz caster sugar
- 1 egg
- 7oz plain flour
- Pinch salt
- 1 tsp bicarbonate of soda
- 3/4 tsp ground cardamom
- 7oz milk, dark or white chocolate, chopped roughly
Instructions
Step 1
Melt and cool the butter for 10 minutes.
Step 2
Beat melted butter, muscovado sugar and caster sugar for 3 - 4 minutes in the bowl of a stand mixer.
Step 3
Add the egg and mix through.
Step 4
Fold in the flour, salt, bicarbonate of soda, cardamom and chopped chocolate.
Step 5
Mix just enough to form a dough then place in the fridge for at least an hour or overnight.
Step 6
Use a teaspoon to portion the dough into 20 - 25 scoops, then press each cookie down to make it round.
Step 7
Preheat Grill at 200 C.
Step 8
Once the unit has preheated, bake the cookies on greaseproof paper, in batches (with 1 inch space between each cookie) at 200 C for 8 minutes using the Bake function.
Step 9
Allow to cool for 10 minutes.
