Creamy Goats Cheese Orzo Risotto
This Creamy Goats Cheese Orzo Risotto is pure comfort!
This meal doesn't require all the usual stirring that is involved in making risotto. The orzo absorbs all the flavour in the liquid making for the dreamiest dinner that is ready in 10 minutes.

Ingredients
- 1 tbsp oil
- 2 tbsp butter
- 4 cloves garlic, finely sliced
- 17.6oz orzo
- 1 tbsp thyme
- 1 zest and juice of lemon
- To taste salt and pepper
- 4.3oz milk (warm)
- 26.4oz hot stock of choice
- 2.6oz parmesan grated
- 4.4oz goats cheese
Instructions
Step 1
Heat the oil in the Ninja Foodi Multi-Cooker and add the butter
Step 2
Add the garlic and saute for 1 minute, before stirring in the orzo and thyme. Saute for 2 minutes then add the lemon and seasoning
Step 3
Slowly pour in the stock and milk
Step 4
Close the lid of the Ninja Foodi Multi-Cooker and pressure cook on high for 3 minutes
Step 5
Carefully quick release the pressure and take care to remove the pressure cooking lid
Step 6
Stir in the parmesan and goats cheese. Allow to sit for 2 minutes before serving
