Ingredients

  • 2.5 cups all-purpose flour
  • 1 tsp baking powder
  • 1.5 cups m granulated sugar
  • 0.75 cup vegetable oil or melted butter
  • 1 cup unsweetened cocoa powder
  • 4 large eggs
  • 2 tsp vanilla extract or peppermint extract
  • Pinch salt

Additional

  • 3/4 cup powdered sugar

Instructions

Step 1
Mix all wet ingredients in the food processor until we’ll incorporated.

Step 2
Add in all dry ingredients and mix until blended.

Step 3
Transfer the dough to a bowl. Cover dough and refrigerate for 45 - 60 minutes or refrigerate overnight (until it isn't too sticky to work with).

Step 4
Line baking sheets with parchment paper. Scoop dough out and shape into balls ( use small ice cream scoop, or large soup spoon) . Roll in powdered sugar then place on prepared baking sheet spacing them apart.

Step 5
Bake in preheated oven 10 - 12 min, they should be soft when touched and should appear slightly under baked.

Step 6
Store cookies in an airtight container once they are completely cool.
