Ingredients

For the biscuit

  • 4oz buckwheat flour
  • 3oz oat milk
  • 1oz coconut oil
  • 4 tbsp maple syrup
  • 1 tsp baking powder
  • 3 tbsp water

For the vanilla cream

  • 2oz cashews (soaked in water overnight)
  • 2 tbsp coconut cream
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract

Remaining ingredients

  • 3 tbsp strawberry jam
  • 7oz dark chocolate

Instructions

Step 1
Make sure you soak your cashews in cold water for at least 4 hours (or overnight).

Step 2
Start by making the biscuits. Pre-heat the oven to 160 degrees celsius.

Step 3
Mix together the buckwheat flour, oat milk and baking powder in a bowl. Mix everything together well until a cookie-dough mixture forms.

Step 4
Melt the coconut oil then add this to the mixing bowl along with maple syrup, vanilla extract and water. Mix everything together well until a cookie-dough mixture forms.

Step 5
Roll the dough out on a floured surface and cut into round biscuit shapes. Making sure you make an even amount.

Step 6
Place these biscuits on a lined baking tray and bake in the oven for 12-15 minutes. Set aside to cool.

Step 7
To make the vanilla cream, start by draining and rinsing the soaked cashews. Place them in a food processor along with the coconut cream, maple syrup and vanilla extract. Blend until the mixture is really smooth

Step 8
Once the biscuits are completely cool spread some of the cashew cream on to the bottom side of one biscuit and a layer of jam onto the bottom side of another biscuit. Sandwich the two together. Repeat with the remaining ingredients.

Step 9
Place the biscuits into the fridge to set a little for half an hour.

Step 10
Melt the dark chocolate in a saucepan over a low-medium heat then remove the biscuits from the fridge and coat each one with the melted chocolate.

Step 11
Place the coated biscuits onto a baking tray and place in the fridge for 1 hour to set.
