Ingredients

  • 1 cup rice
  • 1 tomato
  • 1/2 onion
  • 1.75oz peas
  • 0.7oz spring onions
  • 1.75oz bell pepper
  • 1.75oz chickpeas
  • 17.5fl. oz vegetable broth
  • 1 tsp pepper
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp dried herbs
  • Optional vegan cheese (optional)

Instructions

Step 1
Add all ingredients except of the cheese and spring onions to a non stick pan.

Step 2
Once done, stir in the vegetable broth and use a plate or a lid to keep the heat. Let it simmer for 40 Minutes.

Step 3
Optional, add vegan cheese for an extra creamy version.

Step 4
Garnish with spring onions and enjoy this healthy one pot dish.
