Panzanella Salad
Another gorgeous dish to serve at BBQ or buffet. The crispiest croutons made in the Ninja Foodi. You can get this dish ready in under 15 minutes.
Ingredients
- 10.5oz stale/day old sourdough bread
- 2 tbsp extra virgin olive oil
- 12.25oz colourful cherry tomatoes (halved or quartered)
- 1/4 red onion (finely diced)
- 2.63oz black olives (halved)
- 1/2 cucumber (halved and sliced)
- 1 handful fresh basil leaves
- 1 tsp anchovies
Instructions
Step 1
Begin by tearing or cutting the bread into small chunks.
Step 2
Combine with the olive oil and cook in the Ninja Foodi on air crisp mode at 200c for 15 minutes.
Step 3
Check after 10 minutes to ensure they’re not burning.
Step 4
Meanwhile combine the rest of the ingredients in a large bowl.
Step 5
Once the croutons are cooked add to the bowl and combine.
Step 6
Option to serve with an extra drizzle of olive oil. Enjoy!
