Papaya, Lime & Chilli Sorbet
TIP: Add up to 1 teaspoon of dried chilli flakes if you like things hot.

Ingredients
- 1.75oz caster sugar
- 1.75oz golden syrup
- 1 tablespoon water
- 10.5oz peeled, ripe papaya, deseeded and diced into 1–2cm chunks
- Zest and juice of 2 limes
- 1/2 teaspoon dried chilli flakes
- Pinch sea salt
Instructions
Step 1
Cook the sugar, golden syrup and water in a small saucepan over medium heat, stirring for 1–2 minutes, or until sugar has dissolved.
Step 2
Add diced papaya, lime zest and juice, chilli and salt to the warm syrup. Stir gently with spatula until evenly combined.
Step 3
Transfer mixture to empty tub. Place lid on tub and freeze for 24 hours.
Step 4
Remove tub from freezer and remove lid from tub. Place tub in outer bowl, install paddle onto outer bowl lid, and lock the lid assembly on the outer bowl. Place bowl assembly on motor base and twist the handle right to raise the platform and lock in place.
Step 5
Select SORBET.
Step 6
Once processing is complete, add mix-ins or remove sorbet from tub and serve immediately.
