Potato, Radish & Feta Salad
Now that we are getting closer to BBQ and garden party weather it is the perfect time to start planning some quick, summery side dishes! The flavours in this salad work so well together, especially the freshness of the mint and the tanginess of the feta.
Ingredients
- 2.21lbs Jersey Royal Potatoes
- 3.5oz radishes
- 5 large mint leaves
- 4.2oz feta
- 2 large handfuls of watercress
- 1 tbsp apple cider vinegar
- 1 tbsp olive oil
- Pinch of black pepper
- Pinch of salt
Instructions
Step 1
Cut the potatoes in half, then boil them in your largest zero stick pan for 10-15 minutes until cooked
Step 2
Drain and allow the potatoes to cool completely
Step 3
To assemble the salad, place the potatoes in a large bowl with the thinly sliced radishes, diced feta, finely chopped mint, and the remaining ingredients
Step 4
Mix everything together and serve
