'Pups' in Blankets with Sprouts

Vegan sausages with 'bacon' and Brussel sprouts. I always used to get excited to have pigs in blankets around Christmas time and the fact I can make a vegan version of them again is great! It’s even better and stress free with the Ninja Foodi Dual Zone Air Fryer.

Ingredients

For the vegan bacon

  • 1 aubergine, peeled & thinly sliced
  • 4 tbsp olive oil
  • 1 1/2 tsp smoked paprika
  • 1/2 tsp each salt and pepper
  • 1 1/2 tbsp maple syrup
  • 1/4 tsp liquid smoke

For the rest

  • 1 pack vegan sausages
  • 1 pack Brussel sprouts, washed, peeled & thinly sliced
  • Toothpicks

Instructions

Step 1
First prep the 'pups' in blankets. Mix all the ingredients for the Vegan Bacon, apart from the aubergine, into a wide bowl

Step 2
Take a slice of aubergine & drip into the marinade, covering both sides

Step 3
Slice your sausages in half

Step 4
Wrap the aubergine around the sausage and use a toothpick to secure it

Step 5
Add this to one of the draws in the Ninja Foodi Dual Zone Air Fryer. Cook at 190C for 15mins

Step 6
Once the pups in blankets have been prepped, use the remaining aubergine and cut it into ‘lardon’ shape pieces

Step 7
Add this to the bowl with the marinade and mix well

Step 8
Add the Brussel sprouts in and mix all together

Step 9
Add the mixture to the second drawer of the Ninja Foodi Dual Zone Air Fryer. Cook at 210C for 18 mins. You can use the Sync feature to get them both ready at the same time!
