Vegan Chorizo Meatless Balls
A Mediterranean inspired vegan ‘meatball' recipe, packed with Mediterranean flavour. Vegan chorizo is widely available in most supermarket and really adds a delicious twist to the recipe.
Ingredients
- 14oz Meatless Farm Mince
- 3.5oz Chopped red onion
- 3.5oz Vegan chorizo
- 4 Fresh garlic cloves
- 0.8oz Fresh chopped parsley
- ½ tsp Paprika
- To taste Salt and pepper
For the tomato marinara
- 14oz Fresh chopped tomatoes
- 7oz Passata
- 2 tbsp Olive oil, seperated
- 0.53oz Fresh chopped parsley
- 1 1/2 tsp Garlic powder
- 1 tbsp vegetable bouillon
- To taste Salt and pepper
Instructions
Step 1
Using the bowl of your Ninja Food Processor and the metal blade, pour in the chopped onion, garlic, chorizo, parsley, paprika, salt and pepper – pulse several times to mush the ingredients together
Step 2
Add the fresh mince bit by bit and repeat the process until you have used up all of the mince, once all the ingredients have combined together roll into balls
Step 3
Place the meatless balls in the fridge while you prepare the marinara sauce – at this point preheat the oven to 180C degrees
Step 4
To prepare the sauce, bring a saucepan to medium-low heat and pour in the olive oil, allow the olive oil to heat gently and add the fresh tomatoes, passata, parley, garlic powder, bouillon, salt and pepper. Simmer for approximately 30-45 minutes at low temperature – stirring occasionally
Step 5
Bring a non-stick pan to medium heat and add the olive oil, add the meatless balls to brown – brown them for a minute on each side – then place them in a baking tray and in the oven to cook for 15-17 minutes
Step 6
Then remove the meatless balls from the oven and mix them with the marinara sauce
Step 7
Serve with crusty bread or pasta
