Apple & Cinnamon Pancakes
These Apple && Cinnamon Pancakes will be your go-to weekend breakfast over the winter months! The flavours are so warming and the light texture of the pancake is what dreams are made of. Serve with a dollop of coconut yogurt and drizzle of maple syrup for something truly special.
Ingredients
- 3.5oz buckwheat flour
- 1 apple
- 1 tsp ground cinnamon
- 1 tbsp flaxseed
- 2 tbsp maple syrup
- 2.8fl. oz almond milk
- 1 tsp baking powder
- 1 tsp coconut oil
Instructions
Step 1
Grate the apple then add to your food processor along with all the other ingredients - apart from the coconut oil.
Step 2
Blend on the puree setting of your Ninja Kitchen food processor and you have a smooth mixture.
Step 3
Add the coconut oil to a frying pan over a medium heat and allow to heat thoroughly.
Step 4
Spoon around 2 tbsp of the pancake batter into the frying pan to make a pancake. Cook on one side for around 3-4 minutes, or until bubbles begin to appear on the surface. Flip and cook on the other side for a further 2-3 minutes.
Step 5
Repeat with the rest of the mixture.
Step 6
Serve the pancakes with coconut yogurt, extra apple and a drizzle of maple syrup!
