Cheesy Masala Omelette Quesadilla
Masala omelette is an Indian omelette which is lightly spiced. In this recipe it is made into a Quesadilla. The recipe is highly adaptable and you can add veg or leave it out.

Ingredients
- 4 Eggs
- 1/2 Onion finely diced
- 1 clove of Garlic sliced finely
- 1 - 2 Green Chillies finely chopped, adjust quantity to taste
- Small Handful Fresh Coriander finely chopped
- 1/4 tsp Ground Coriander Optional
- 1/4 tsp Ground Cumin Optional
- 1/4 tsp Ground Turmeric
- 1/2 tsp Red Chilli Powder
- 1/2 tsp Salt Or to taste
- 1/2 tsp Black Pepper Optional
- 2 tbsp Milk, Optional
- 2 tbsp Ghee or Butter
- 4 tbsp Cheddar, grated
- 4 Tortillas
Instructions
Step 1
In a bowl, beat the eggs, then add all the other ingredients minus the ghee
Step 2
In a wide, nonstick frying pan, heat the ghee or butter over a medium heat.
Step 3
Add half the egg mixture to the pan and leave to set, before flipping to cook the other side.
Step 4
Transfer the omelette from the pan on to a plate and keep warm. Repeat for the second omelette.
Step 5
Preheat the Air Fryer.
Step 6
Add Tortilla to the Foodi.
Step 7
Add omelette and sprinkle over Cheese.
Step 8
Top with another Tortilla.
Step 9
Weigh down with a metal trivet or secure with toothpicks.
Step 10
Air Fry at 180C for 5 minutes.
