Ingredients

  • 4 Eggs
  • 1/2 Onion finely diced
  • 1 clove of Garlic sliced finely
  • 1 - 2 Green Chillies finely chopped, adjust quantity to taste
  • Small Handful Fresh Coriander finely chopped
  • 1/4 tsp Ground Coriander Optional
  • 1/4 tsp Ground Cumin Optional
  • 1/4 tsp Ground Turmeric
  • 1/2 tsp Red Chilli Powder
  • 1/2 tsp Salt Or to taste
  • 1/2 tsp Black Pepper Optional
  • 2 tbsp Milk, Optional
  • 2 tbsp Ghee or Butter
  • 4 tbsp Cheddar, grated
  • 4 Tortillas

Instructions

Step 1
In a bowl, beat the eggs, then add all the other ingredients minus the ghee

Step 2
In a wide, nonstick frying pan, heat the ghee or butter over a medium heat.

Step 3
Add half the egg mixture to the pan and leave to set, before flipping to cook the other side.

Step 4
Transfer the omelette from the pan on to a plate and keep warm. Repeat for the second omelette.

Step 5
Preheat the Air Fryer.

Step 6
Add Tortilla to the Foodi.

Step 7
Add omelette and sprinkle over Cheese.

Step 8
Top with another Tortilla.

Step 9
Weigh down with a metal trivet or secure with toothpicks.

Step 10
Air Fry at 180C for 5 minutes.
