Ingredients

  • 2lb Boneless, Skinless Chicken Thighs or Breast in slices
  • 1 Red Pepper, sliced
  • 1 Orange Pepper, sliced
  • 1/2 Red or White Onion, Diced
  • 3 tbsp Olive Oil
  • 1 tbsp Smoked Paprika
  • 1 tbsp ground Coriander
  • A pinch ground Cumin
  • 2 cloves Garlic crushed
  • Olive Oil Spray
  • 1 Lime, Juice only
  • Tobasco
  • Corn or Flour Tortillas

Instructions

Step 1
Preheat the Airfryer.

Step 2
Add the chicken to the basket along with the peppers, onion and oil.

Step 3
Now add Smoked Paprika, Coriander, Cumin and Garlic. Spread over the meat.

Step 4
Spray evenly with a coat of olive oil cooking spray.

Step 5
Cook at 200 C for 12 minutes. Reduce to 5 minutes if using Breast.

Step 6
Halfway through the cooking time, open the lid and stir everything together.

Step 7
Cook for an additional 8 - 12 minutes or until chicken is well done. 3 - 5 minutes if using breast.

Step 8
Squeeze over Lime Juice and a dash of Tobasco.

Step 9
Serve with warm tortillas.
