- 1.7oz oats
- 1.7oz pomegranate seeds
- 1 ripe banana
- 1 whole eggs
- 1/2 tsp baking powder
- Pinch salt
- Dash vanilla extract
- For cooking coconut oil
Instructions
Step 1
To make the pancake batter, combine all of the ingredients apart from the pomegranate seeds && coconut oil in your Ninja blender and blitz to create a smooth batter.
Step 2
Heat a little coconut oil in a non-stick frying pan and bring to a medium heat.
Step 3
Pour in little of the mixture && sprinkle with a few pomegranate seeds and cook until bubbles start to appear on the surface. Repeat this for the remaining mixture.
Step 4
Stack your pancakes and add all of your favourite toppings.
