Small Batch Blender Coconut & Dark Chocolate Cookies
The quickest way to make cookie dough thanks to your Ninja. Plus the quantities yield a smaller amount, especially if you aren’t planning on sharing.

- 1.05oz dairy free butter
- 0.88oz light brown sugar
- 0.7oz caster sugar
- 1.75oz plainflour
- 1/2 tsp baking powder
- 0.53oz desiccated coconut plus more for on top
- 0.53oz oats
- 0.53fl. oz dairy free milk
- 1.05oz grated dark chocolate
Instructions
Step 1
Begin by placing the butter, sugars, flour, baking powder, desiccated coconut, oats and milk into the blender and use the mix function for 10 seconds to combine the ingredients.
Step 2
Empty the mixture into a bowl and fold through 20g of the grated chocolate.
Step 3
Roll into 4 balls and place them spread out onto a lined baking tray. Push them down gently and place the tray into the freezer whilst the oven preheats at 180c.
Step 4
Once the oven is hot (after approx.15 minutes) place the cookies into the oven and bake for 12 minutes.
Step 5
Allow to harden for a few minutes and add the remaining grated chocolate and extra coconut. Enjoy.
