Super Berry Protein Granola Cups
These high protein yoghurt and granola cups are delicious and so easy to make, they can even be prepared the night before to save time. The Mighty Human Super Berry Protein Powder is one of the best berry vegan proteins I’ve tried and adds a lovely sweet, fruity flavour to this recipe.

Ingredients
For the granola cups
- 7oz gluten free oats
- 1.4oz chopped almonds
- 1 scoop (15g) Mighty Human Super Berry Protein Powder
- 2.1oz melted vegan butter
- 3 tbsp maple syrup
For the filling
- 6.13oz coconut yoghurt
- 1 scoop (15g) Mighty Human Super Berry Protein Powder
- Berries to decorate (I used raspberries, blueberries, pomegranate)
Instructions
Step 1
Preheat the oven to 160oc
Step 2
Add all the ingredients for the granola cups to your food processor
Step 3
Process on ‘low’ for 10 seconds
Step 4
Press the granola mixture into 8 cupcake tray holes, forming a cup shape
Step 5
Bake in the oven for 10 minutes
Step 6
Wait for the cups to cool completely before removing them from the tray
Step 7
To make the filling, combine the yoghurt and protein powder until smooth
Step 8
Spoon the filling into the granola cups and top with berries
