Vegan Meatballs with Spicy Tomato Pasta

Ingredients
LEVEL 1 (Combi Pan)
- 15oz pasta
- 30oz tomato and chilli pasta sauce
- 24fl. oz water
- 1 tbsp olive oil
- 4oz mixed pitted olives
LEVEL 2 (Bake Tray)
- 1 green pepper, deseeded, cut 2.5cm pieces
- 1 red pepper, deseeded, cut 2.5cm pieces
- 1 red onion, peeled, cut 2.5cm pieces
- 1 tbsp olive oil
- 1 tbsp Italian herb seasoning
- 19oz vegan frozen meatballs
- Salt and ground black pepper, as desired
Instructions
Step 1
Place all Level 1 ingredients in the Combi Pan and stir to combine. Slide the pan into Level 1.
Step 2
In a large bowl, toss vegetables, oil and herbs until evenly coated. Place peppers in an even layer on Bake Tray and place the meatballs on top. Brush meatballs with oil. Season with salt and pepper, as desired. Slide the tray into Level 2.
Step 3
Close door and flip the SmartSwitch to COMBI COOKER. Select COMBI MEALS, set temperature to 175°C and set time to 12 minutes. Press START/STOP to begin cooking (the unit will steam for 10 minutes before cooking).
Step 4
When cooking is complete, remove tray and pan. Stir the pasta and serve with the roasted vegetables and meatballs.
